After seeing many posts about “jicama rice” in the blog world, I couldn’t help but jump on the bandwagon. I bought a fresh jicama, to pulverize in the food processor, but had the hardest time peeling it. Is it just me, or is jicama impossible to peel? Please let me know if you have an easier way to peel it

Once I food-processed the crunchy vegetable, I wasn’t sure what to do with it. Hmmm, what is the best way to have white rice? And the answer was just then so obvious to me—sushi! I decided to use cooked salmon though, because that’s what we had on hand. Hence, the raw rice, cooked fish blog title
.
As I was scrounging around for the nori, I discovered we had a bunch of chopped (or cut-with-kitchen-scissors) nori lying around. Then I thought, hey why not make a sushi bowl, and make it 10xs easier on myself? This brings me to:
California Salmon Bowl
1 1/2 cups jicama rice (plain rice would be great too!)
1/2 tsp sesame oil
1 tsp sesame seeds
salt to taste
2-3T seasoned rice vinegar
wasabi to taste
1 persian cucumber
1/4-1/2 cup salmon (seasoned with mayo if desired)
1/4-1/2 an avocado
handful of nori pieces
First, season the jicama rice with the sesame oil, sesame seeds,
salt, vinegar, and wasabi:
Add the rest of the ingredients and enjoy

Cannot do without my carbs, especially in the form of kabocha

I would also like to talk a little bit about fats. Many wonderful blogs have been talking about the subject recently, including Michelle’s, Karen’s, and Heather’s. Back in the day, I was about as fat-free as you can get. My salads had no oil, I hardly ate more than a few nuts at a time, and I would use cooking spray for “frying” and sautéing. I thought skim yogurt, fat-free snacks, and nonfat eats were the way to go. Then, I got wiser (thanks to all the plethora of information out there, especially in the lovely blogging world
), and took baby steps towards incorporating fats back in.
I currently eat a ~tablespoon of chia seeds and almond milk in the morning, a teaspoon or so of almond butter and a hunk of hummus for lunch, and about a teaspoon of oil for dinner. I thought I was getting enough fats through my diet, but with all these various posts, I think not. During the course of the day, I probably don’t even get 2 tablespoons worth of oil. In addition, I’m lacking in energy often (although it has improved!) and have hormone issues. So, I declare today as the first day to change all that and to add more healthy fats in with no more fear of gaining weight. Who’s with me

Your jicama rice looks good – love the jicama. Do you have a really good knife? I don’t find them difficult to peel, but I find the knife is key.
So wish I liked nori…but I don’t.

Oh yes, gotta have your good fats! I have to eat a lot of “low fat” stuff b/c of my high cholesterol but I need my avocados, nuts, etc.! That sushi bowl looks absolutely terrific! I haven’t seen the jicama rice – do you just combine it, processed and raw, with the cooked rice?
Fat’s keep me full! And supposedly help with belly fat too!

I’ve definitely become a believer in fats. I used to eat a no-fat diet. I would have died rather than eat a meal with more than 5-7 g of fat in it. (I had problems). But now I moderate things better. I still try not to eat too much fat, but I also try to get enough.
After years of fearing fat, I am now happy to say that I LOVE it! I eat about 4 T per day now, and my hair is so much glossier than ever before!

I’m all for trying to add more good fats into my diet – advacados, nuts and peanut butter are three of my favourite things, but I probably don’t eat enough of them either.

Amen to healthy fats. Sometimes I’m like… wow, did I really just eat that much guacamole? But in the end I think…..this is SO important and healthy for my body! My skin will love me for it too!

I find that I feel SO much better when I eat healthy fats. They help keep me satisfied and I feel more of a sense of well being:) I too used to REALLY restrict fats in any form. Boy, what a miserable life that was! I have learned so much from the blogging world about good eats:)
I have never bought a jicama! I don’t even know if I’ve ever seen one. Man, I just keep adding new foods to my ‘to buy’ list. Hope you had a good day:)
I’ve definitely benefited from more fat in my diet! Back in my ED days, I would shun away from ALL sorts of fat. Then as in my recovery days, I started eating up to 3 lbs of nuts a day. Okay, that’s a bit overboard and I had some digestive issues from too much nuts, but my SKIN sure became all shiny and smooth and clear! YAY!
I totally feel like good fats like avocados and almonds make me feel great and full and also contribute to the look of my hair and skin. You can definitely tell when you aren’t getting enough good fat!
